GG's Famous Pancakes

Angie's Famous Pancakes. 

2x eggs

5 tbsp Stevia (healthier plant based sweetener) or caster sugar

600ml Butter milk. (fermented low fat dairy product)

1 fresh orange juice (thinner pancakes) OR zest of x1 orange juice for healthy option (Less sugar)

1/2 teaspoon Bi-Carb soda. 

3 cups of unbleached self raising flour (Organic preferably)


1 -2 tablespoon Butter. (Melted)


Method:

1) Mix sugar and eggs for 2mins or soft slightly creamy.


2) Add Butter Milk & Squeeze fresh orange juice into the mixture and Bi-Carb Soda. 


3) Next fold in the self raising flour 


4) Best to leave the mixture to rest for 20mins in fridge or overnight. 


Note: Butter. 

Using the same pan to cook the pancake in. I add 1or 2 tablespoon butter, when butter has melted,  pour melted butter into the pancake mixture.  Wiping the excess butter with a paper towel and to continue to use the same paper towel to grease the pan before cooking each pancake.
